Retail Business Environment
This module gives learners a clear understanding of how the grocery and FMCG sector operates and how buying and merchandising functions within it. Learners explore the competitive landscape, customer behaviour across channels, and how brand strategy shapes category decisions. They will learn to use business and performance data to support commercial choices, understand B&M roles and systems, and work within key legal requirements such as intellectual property and food labelling.
Planning & Budgeting
This module introduces learners to the core planning processes that translate business strategy into practical commercial actions. Learners develop the skills to build sales and stock plans, create seasonal calendars aligned to food and drink trading cycles, and use product and trend research to inform category decisions. The unit also covers supplier performance management, range tailoring by grading and location, and reviewing post‑season results to drive continuous improvement.
Commercial Range Development
This module develops apprentices’ ability to build commercially sound food/FMCG ranges that balance customer needs, creativity, and profitability. Learners explore how to plan core, seasonal, and promotional ranges; ensure product safety and compliance; and drive innovation through sampling and supplier collaboration. They also learn to create sales, stock, and option plans, manage pricing and margin, and make range decisions that reduce waste and improve availability.
Trading
This module equips learners with the skills to manage in‑season performance and make informed trading decisions that protect sales, margin, and availability. Learners explore how to use KPIs and WSSI to monitor performance, plan replenishment and repeat buys, and manage stock flow effectively. The module also covers reacting to trading patterns through markdowns, phasing, and promotions, analysing sales and margin to measure success, and using promotional calendars and events to drive volume and footfall.
EPA Prep
This module ensures apprentices are fully prepared for Gateway and the End‑Point Assessment (EPA). Learners receive structured guidance on what to expect at each stage of the EPA, including the professional discussion, work‑based project, and knowledge assessments. They complete practice activities and mock assessments aligned to the EPAO’s requirements, helping them build confidence in articulating their skills, showcasing evidence, and demonstrating competence against the standard. The module also supports learners in reviewing their portfolio, identifying any gaps, and ensuring all documentation meets compliance expectations before entering Gateway.
